Tie Guan Yin, Also called as “Tie Kuan Yin”, “ Iron Goddess”, is a kind of Chinese Oolong tea, Its origin is in Fujian AnXi.


一、About Origin Anxi

There were plenty of villages and towns grow Tie Guan Yin In Anxi, The tea from different villages and towns have different tastes, The three towns known to chinese tea lovers are  Xi Ping, Gan De and Xiang Hua, There are best quality of Tie Guan Yin of Anxi.


Based on the overall development of the Tie Guan Yin tea industry, the government had made the decision of "return tea plantation back to plough" since 2010. After several years till now, the tea plantation area of Anxi has stabilized at about 600,000 areas。



二、The type of Tie Guan Yin

According to the different processing mode, Tie Guan Yin is divided into mercy and Carbon baked.  And Difference procession divided The Mercy Tie Guan Yin into three different flavors: Xiao Qing, Zheng Wei and Tuo Suan. The processing steps of these three flavors are same, but its processing time and the degree of each process are different. The Biggest difference is in Roasting:  

Zheng Wei: after the first day of picking leaves, its roasting step should be finished before 11 AM of second day.

Xiao Qing: its roasting step is finished till 14:00-18:00 of second day.

In fact, Xiao Qing and Tuo Suan Tie Guan Yin are bad for health and maybe harm your stomach. This year, the Anxi government strongly advocates the traditional Tie Guan Yin With traditional procession, that is Zheng Wei Tie Guan Yin, this policy aims to improve the quality of Tie Guan Yin and benefit of the health.

How to distinguish the three flavors of Tie Guan Yin? A simple method is to see their dry tea. the color of Zheng Wei’s dry tea is dark green, some is slightly yellow and without nice looking, but Xiao Qing’s is greenish and with beautiful looking.  Tuo Suan Tie Guan Yin is now largely out of production in the Anxi region and almost non tea lovers drink this kind.

The carbon baked Tie Guan Yin is with carbon baking procession after mercy Tie Guan Yin. Its flavor is more intense and the tea can be stored in normal temperature. (the mercy tie guan yin is suitable for storing in freezing freezer at -18 degrees.)

Depending on the picking season, Tie Guan Yin can be divided into spring and autumn teas. The characteristic of spring tea is smooth soup and the advantage of Autumn tea is better aroma.


三、How to Brew Tie Guan Yin

Since we develop China traditional tea culture, here we only talk Gong Fu brewing.

While, difference with Wuyi rock tea, Tie Guan Yin is more suitable for western brewing.

Good quality Tie Guan Yin could be steep longer while without Bitter astringent.


1.Suitable teaware

Gai Wan and tea pot.

Tea pot could bring better soup and smooth throat feeing.

2.Water

Boiling water.

3.ratio of tea and water

1g tea with 15ml water

4.steeping time

First infusion: 10-20seconds. While it is no problem for longer steeping time. Add more 5-10 seconds in following infusions.

A good quality Tie Guan Yin could be infused more than 8 times and keep without water feeling.


四、some special reviewing method for Tie Guan Yin

1. Listen to the sound

Boutique Tie Guan Yin is tightly knotted than other oolong teas, the leaves are heavy. Take some teas into the teapot (or Gai Wan), gently shake the cup, you could hear the sound of the impact between tea and tea cup. If it sounds clear and crisp then its quality is fine ,if it sounds dull hoarse, means poor quality.

2. Because Tie Guan Yin is more blister, you could use professional reviewing way to save time:

Brew 5g tea in a 110ml cup and steep for 2 minutes. If there is no obvious bitterness and astringent, the quality of this tea should be not bad, If you need to review it more carefully, you'll have to review the five aspects and we would write other article for it.
